Dr. Bruce Hamaker is a Professor of Food Science and the Director of the Whistler Center for Carbohydrate Research at Purdue University. Dr. Hamaker earned his M.S. in Nutrition and Ph.D. in Food Chemistry from Purdue University. His primary research areas include carbohydrates and health, cereal starch and protein structure-function relationships, and cereal chemistry and processing.
